Bai Hao Yin Zhen, or Silver Needle, is a Chinese white tea made from unopened tea buds, covered in the fine silvery down that gives it its name.

It is known for a delicate, gently sweet cup with soft floral notes and a smooth texture. Take your time with this one; the quieter flavours are part of the pleasure.

• Ingredients: Silver Needle (Bai Hao Yin Zhen) white tea
• Brewing: 75–80°C
• Amount: 6–15g per 1l of water
• Steeping time: 1–2 minutes. Up to 3 infusions possible.
• Water: Filtered or mineral water is a good choice for this delicate tea.
